ABOUT Green Table Farms

Our Story

Green Table Farms is a 200-acre family farm in Washington County, NY. Originally three dairy farms, the property was sold to a part-time farmer in 1980 who raised pigs, with most of the fields in hay production.

After 35 years rigging and building effects in the film business, Ashley Hollister was ready for a change. Ashley and his wife, Mary Cleaver, bought the farm in the fall of 2012 and they have been working to improve the land and expand the infrastructure ever since. Ashley’s decision to become a farmer was driven by a desire to supply Mary’s New York City restaurant, The Green Table, with pastured poultry, vegetables, and flowers raised with regenerative practices. When The Green Table closed in 2018, the farm model transitioned to that of GrowNYC producer. Following years of sourcing from Greenmarket farmers, Mary became one!

With approximately 40 acres in cultivation, Green Table Farms raised heritage breed poultry on pasture from April to November and sold chickens and eggs from June to November at the Union Square Greenmarket on Saturdays. Our heritage breed turkeys were also available the weekend before Thanksgiving. We have also produced organic mushrooms, vegetables, flowers, and a small amount of grain, the latter used as feed for our pastured poultry. In 2018 we began our first foray into pig farming, raising a variety of heritage breeds.

Green Table Farms chickens and vegetables have also been used in our famous Pot Pies, which were available for sale at the Greenmarket.

In the spring of 2022, Mary and Ashley made the decision to transition away from the day-to-day work of poultry farming. They plan to continue stewardship of the 200+ acres at Green Table Farms and are hoping to find a younger group of farmers who are interested in making use of the farm’s existing infrastructure.

Our produce, livestock, and eggs were all USDA Certified Organic by NOFA-NY and our farm was certified by the Real Organic Project and we hope that the next generation of farmers on the land will seek to farm the land in a similarly holistic spirit.
